How much privacy will the crew give us during our charter? I'm very keen to book a yacht charter but am worried that the crew will be around the entire time and won't give us any time to ourselves.

The crew will do as you wish. As long as they can anticipate your needs because you have advised them beforehand, they will never be in your way if you do not want to see them — unless for emergencies of course. Most of the crew is invisible until and unless the guests make some requests, from food and beverages to entertainment activities and more. You need not worry about the overwhelmong presence of crew, discretion is their second nature, and secrecy is part of the job — which is a good reason why many known faces enjoy chartering superyachts rather than spending their holidays in places that are more public.
